Corn, Tomato and Avocado Salad
2 cups cooked corn kernels
1 avocado, diced
1 pint grape tomatoes, halved
1 shallot, peeled and minced
2 tbsp olive oil
½ tsp grated lime zest
1 tbsp lime juice
Handful of cilantro, chopped
Combine the corn, avocado, tomatoes and shallot in a large bowl.  Whisk the rest of the ingredients together in a small bowl and then  gently stir into the corn mixture.

My talented friend Victoria made this! Totally making this for Skyler’s room! Love it!I used a canvas for mine (16x20) take the crayons  and glue each one down (I used gorilla glue) then use a heat gun and  start melting the crayons. I varied the angle of the canvas a couple  times so it would drip and pool a little differently each time. I think I  might spray it with something to protect it.

12 new potatoes (1-1/2 lb.), cooked
2 Tbsp. oil
1 cup KRAFT Shredded Cheddar Cheese
1/4 cup OSCAR MAYER Real Bacon Bits
3/4 cup BREAKSTONE’S Zesty Blends Jalapeño Sour Cream
2 Tbsp. chopped fresh cilantro
Make it:
HEAT oven to 375°F. CUT potatoes  lengthwise in half; scoop out centers, leaving 1/4-inch-thick shells.  Reserve centers for another use. PLACE shells, cut-sides up, on baking  sheet; brush insides of shells lightly with oil. Sprinkle with cheese.  BAKE 20 min. or until golden brown. Top with remaining ingredients.
